[I decided to avoid the obvious "salad days" pun in the description.] I wanted something relatively simple for dinner, though I wasn't sure what that would be. I had an ear of corn I wanted to cook and I did. I also had a cauliflower and wanted to use it up while it was still good. So, I cut it up, added some olive oil (the bottle was almost empty and I wanted to finish it so I could open the replacement) and spices, and also decided to roast a head of garlic since the extra effort was negligible. I had some baby spinach and decent cherry tomatoes, so I put them in a bowl. I had a cucumber too, so I added that—and two mushrooms that were still good. While the cauliflower was finishing roasting, I remembered I had some frozen, cooked shrimp that would take like 5 minutes or less to thaw. I combined it all, added some Italian dressing (from a bottle), tossed it a little and <BAM!>, instant salad. Though maybe not instant, as much as "an hour later salad"—I had eaten half of the ear of corn while I was waiting.

I didn't really have any strong idea of what I was going to do until I was doing it, but it was good.

I thought it looked decent and I haven't taken a picture of any food items in quite a while. Also, quite a while ago I put out a colorful tablecloth that I had bought in Peru, almost 25 years ago, and felt it was time to use it. I was a bit paranoid about ruining the tablecloth, but I avoided any accidents. I think it's a nice colorful salad (on a colorful tablecloth).
